Making a biscotti is a unique process. Our biscotti start off as dough, and are then shaped into loaves. The loaves head into the oven for their "first" bake. Once this baking process is completed, the loaves are then sliced to form the biscotti. Once the biscotti are sliced, they are then placed in the oven for their "second" bake. During this "second" bake, moisture is removed from the cookie and the biscotti forms its delicate light and crispy texture. Hence, the Italian definition (BIS) twice, (COTTI) baked. Once they have completed the baking process, they are dipped in various delicious chocolate coatings, and ready to be enjoyed!
